Ingredients notes
Okra: Fresh, firm okra works best. Smaller pods are less slimy and crisp better.
Olive oil: Helps the okra roast evenly and develop crisp edges.
Cornmeal (optional): Adds extra crunch and texture.
Spices: Smoked paprika and garlic powder add depth, but can be customized.
Salt: Enhances flavor and helps reduce moisture.
How to make Crispy Oven-Roasted Okra
Ingredients | Quantity |
|---|---|
Dairy-free milk (almond, oat, etc.) | 1 cup |
Avocado oil (or melted butter) | 1/2 cup |
Honey (or cane sugar) | 1/2 cup |
Large egg | 1 |
Medium grind cornmeal | 3/4 cup |
Gluten-free 1:1 flour blend | 1 1/4 cups |
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Wash and thoroughly dry the okra. Slice into ½-inch pieces and transfer to a large mixing bowl.

Add olive oil, cornmeal (if using), garlic powder, smoked paprika, salt, and black pepper. Toss until evenly coated.
Spread the okra in a single layer on the baking sheet, leaving space between pieces to encourage crisping.

Roast for 20–25 minutes, flipping halfway through, until golden, crispy on the edges, and tender inside.
Remove from the oven and serve immediately. Best enjoyed hot for maximum crispiness.
