How to make Garlic Herb Roasted Delicata Squash

Ingredients

Dairy-free milk (almond, oat, etc.)

1 cup

Avocado oil (or melted butter)

1/2 cup

Honey (or cane sugar)

1/2 cup

Large egg

Medium grind cornmeal

3/4 cup

Gluten-free 1:1 flour blend

1 1/4 cups

Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.

Wash the delicata squash, slice it lengthwise, and scoop out the seeds. Cut into half-moon slices about 1 cm thick.

Place the squash slices in a large bowl and toss with olive oil, minced garlic, dried herbs, salt, and black pepper until evenly coated.

Spread the squash in a single layer on the prepared baking sheet, making sure the pieces are not overlapping.

Roast for 20–25 minutes, flipping halfway through, until the squash is tender and lightly golden around the edges.

Remove from the oven and finish with fresh herbs or lemon zest if desired. Serve warm.
