Ingredients notes
Delicata squash: Thin-skinned and naturally sweet. Slice into half-moons for even roasting.
Garlic: Fresh garlic adds bold, savory flavor that balances the sweetness of the squash.
Herbs: Dried herbs like thyme or rosemary work well, but fresh herbs can be added after roasting.
Olive oil: Helps the squash caramelize and keeps it from drying out.
Salt & pepper: Essential for bringing out the natural flavors.
How to make Garlic Herb Roasted Delicata Squash
Ingredients | Quantity |
|---|---|
Dairy-free milk (almond, oat, etc.) | 1 cup |
Avocado oil (or melted butter) | 1/2 cup |
Honey (or cane sugar) | 1/2 cup |
Large egg | 1 |
Medium grind cornmeal | 3/4 cup |
Gluten-free 1:1 flour blend | 1 1/4 cups |
Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
Wash the delicata squash, slice it lengthwise, and scoop out the seeds. Cut into half-moon slices about 1 cm thick.

Place the squash slices in a large bowl and toss with olive oil, minced garlic, dried herbs, salt, and black pepper until evenly coated.
Spread the squash in a single layer on the prepared baking sheet, making sure the pieces are not overlapping.

Roast for 20–25 minutes, flipping halfway through, until the squash is tender and lightly golden around the edges.
Remove from the oven and finish with fresh herbs or lemon zest if desired. Serve warm.
