How to make Spicy Pumpkin Tomato Soup

Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 4–5 minutes until soft and translucent.
Add the garlic and cook for 30 seconds until fragrant, stirring constantly to prevent burning.

Stir in the crushed tomatoes, pumpkin purée, vegetable broth, chili flakes, paprika, and cumin. Mix well until fully combined.
Bring the soup to a gentle simmer. Reduce heat to low and cook uncovered for 15–20 minutes, allowing the flavors to meld.

If using, stir in the coconut milk for a creamier texture. Taste and adjust seasoning with salt and black pepper.
Blend the soup partially or fully using an immersion blender, if desired, for a smoother consistency.
