How to make Salmon Burgers

Avocado oil (or melted butter) | 1/2 cup |
Honey (or cane sugar) | 1/2 cup |

Medium grind cornmeal | 3/4 cup |
Gluten-free 1:1 flour blend | 1 1/4 cups |
Finely chop the salmon with a knife or pulse briefly in a food processor until coarsely minced. Avoid overprocessing.
Transfer the salmon to a bowl and add breadcrumbs, egg, Dijon mustard, garlic, herbs, lemon zest, salt, and pepper. Mix gently until just combined.

Divide the mixture into equal portions and shape into patties. Place them on a plate and refrigerate for 5–10 minutes to help them firm up.
Heat olive oil in a large skillet over medium heat. Once hot, add the salmon patties and cook for 4–5 minutes per side, until golden brown and cooked through.

Remove from the pan and let rest briefly before serving.
Serve in buns with your favorite toppings, or over salads or grain bowls.
